The grapes are firstde-stemmed and then fermented in temperaturecontrolled stainless steel tanks for 11-15 days, withconstant skin contact, at 25ºC. During fermentationthe wine is both pumped over the cap of grape skinsat the top of the tank (remontage), and also the cap ispressed into the fermenting wine every second day(pigeage). Both these processes ensure maximumcolour and aroma, without producing excessivetannin. Afterwards the solid parts of the grapes arepressed in vertical wooden presses with doublescrews. This is a smooth and slow process thatfavours the extraction of the colour and tannins thatreside in the skin of the grapes.
